Father's Day Recipe: Coffee Cake


Who doesn't love cake? It is a favourite special occasion treat to have an iced cake in our household. Coffee Cake has been a recent cake recipe I found again, and the resulting iced cake was one which everyone said they all enjoyed having.

As part of a special family meal the other night, to celebrate it being Father's Day this coming Sunday, I baked and iced a Coffee Cake for dessert, after our main meal of Fish Pie and an assortment of cooked vegetables. It was a yummy end to a lovely meal had all together.

Here is the recipe, so you can enjoy delicious slices of Coffee Cake perhaps as part of your Father's Day celebration this weekend also:

(Please note that when I baked this recipe myself, I doubled the ingredients).

Ingredients:

1 teaspoon Instant Coffee Powder
1 tablespoon Boiled Water
175g Butter (softened)
3/4 cup Sugar
1 teaspoon Vanilla Essence
3 Eggs
1 1/2 cups Flour
1 1/2 teaspoons Baking Powder
3 tablespoons Milk

Ingredients for Coffee Icing:

2 teaspoons Instant Coffee Powder
1 tablespoon Boiled Water
2 cups Icing Sugar
1/4 teaspoon Butter (softened)
2 tablespoons Water (Approximately)
1/4 teaspoon Vanilla Essence

Optional Extra: Chopped Walnut Pieces

Method:

Dissolve two teaspoons of Instant Coffee Powder in one tablespoon of boiled water.
Cream the softened butter, sugar, coffee mixture and the vanilla essence until the combined ingredients are smooth and fluffy in texture.
Add one egg at a time to the creamed butter mixture, beating well after the addition of each egg.
Sift the flour and baking powder together in a separate bowl.
Fold the prepared flour mixture a little at a time into the prepared egg & butter mixture.
Add in milk and stir the resulting cake mixture until all is combined.
Pour cake mixture into a greased and lined cake tin. (I used a 24cm cake tin).
Bake at 190 degrees celsius (374 fahrenheit) for 20 -25 minutes, or until cake springs back when lightly touched.
Leave cake to cool for about 10-15 minutes, before turning it out onto a wire cooling rack.

Coffee Icing:

Once the cake has cooled, it can be iced with Coffee icing.
You can also decorate the iced cake with chopped walnut pieces should you wish to do so.
